TASTING
A complex nose of lemon peel and white pulp,
the mouth is racy, lively, and mineral.
VINIFICATION
Harvest not destemmed and not chaptalized. Soft pressing, severe settling. First fermentation in tanks under temperature control. No second fermentation and maturing of 6 months on the lees.
